Recipe Cost By Group Report

Use this report to gauge average prices, costs and profits for items/recipes. The following reports show how the report will look depending on which option is selected from the drop down list for the Recipe Detail Rollup parameter.

Report Column(s) Description

  • 'RECIPE DESCRIPTION' column: item/recipe name from the item master.
  • 'TYPE' column: assigned in the item master (Recipe, Standard, or Prepared).
  • 'UNIT OF MEASURE' column: the unit of measure for the item details shown.
  • 'RECIPE QTY ' column: the quantity of the item used in the item per the unit of measure.
  • 'SOLD QTY' column: the pmix count of the Item and Measure.

An item may show on this report multiple times if there are multiple units of measure assigned to it. The details for the each instance will be different according to the unit of measure reported.

To limit the view of the item to only those units of measure with the Sell permission, put a check in the Linked as Sold box.

  • Group [1,2,3]] and [Group Level[1,2,3]] are populated according to smart group hierarchies.

The report measures are built in related groups and these are, in general terms, the following:

  • Standards: These are the reference (not actual) selling price or costs identified in the Item Master.

    Best Practice Hint: use Standard Cost to help find Recipe Building Mistakes as well as to model a new menu rollout.

    • Std Cost: standard cost comes from ingredients, rolled up through recipes, and is determined in the item master. It is a reference cost, not the real cost.
    • Std Cost Ext: standard cost extended is Std Cost * Sold Qty.
    • Recipe Std Cost Ext: recipe standard cost extended is Std Cost * Recipe Qty (not often used).
    • Std Price: standard price comes from the price (standard selling price) indicated in the item master for the selling measure.
    • Std Price Ext: standard price extended is Std Price * Sold Qty.
    • Std Profit: standard profit is (Std Price – Std Cost) * Sold Qty.
    • Std Markup %: standard markup percent is the percent that [std cost] is marked up to reach [std price]; for example a $3 cost selling at $9 is 300% markup.
    • Margin %: (standard) margin percent is ([Std Price] – [Std Cost]) / [Std Price] and represents the percentage retained by the restaurant after costs, as a standard.
  • Averages: These are the real selling costs and selling prices (gross and net) averaged for the date range and unit selection of the report.

    • Avg Cost: average cost comes from ingredients COGS, rolled up through recipes.
    • Avg Cost Ext: average cost extended is Avg Cost * Sold Qty.
    • Recipe Avg Cost Ext: recipe average cost extended is Avg Cost * Recipe Qty (not often used).
    • Avg Cost %: average cost percent is Avg Cost / Avg Price.
      • Avg Cost Pr Net: average cost percent net is Avg Cost / Average Price Net.
    • Avg Price: average price comes from the average gross selling price from POS transactions.
      • Average Price Net: average price net comes from the average net (after discounts) selling price from POS transactions.
    • Avg Price Ext: average price extended is Avg Price * Sold Qty.
      • Extended Average Price Net: extended average price net is Average Price Net * Sold Qty.
    • Avg Profit: average profit is (Avg Price – Avg Cost) * Sold Qty.
      • Average Profit Net: average profit net is (Average Price Net – Avg Cost) * Sold Qty.
    • Avg Markup %: average markup percent is the percent that [Avg Cost] is marked up to reach [Avg Price]; for example a $3 cost selling at $9 is 300% markup.
      • Average Markup Net: average markup net (percent) is the percent that [Avg Cost] is marked up to reach [Average Net Price].
    • Avg Margin %: average margin percent is ([Avg Price] – [Avg Cost]) / [Avg Price] and represents the percentage retained by the restaurant after costs, on gross sales.
      • Average Margin Net: average margin net (percent) is ([Average Price Net] – [Average Cost]) / [Avg Price] and represents the percentage retained by the restaurant after costs, on net sales.
  • Deltas: These are the differences between Standard Columns and their Average cousins.

    • Profit Delta: ([Std Profit] – [Avg Profit]).
    • Margin Delta %: ([Margin %] – [Avg Margin %]).
    • Delta Markup Net: ([Std Markup %] – [ Avg Markup %]).
    • Delta Margin Net: ([Margin %] – [Average Margin Net %]).
